European haute cuisine with a contemporary flair, prepared by one of Marriott International’s youngest female chefs de cuisine, Roxanne Lange, who is from the Netherlands. Chef Roxanne sources only the finest of European ingredients in combination with locally grown organic produce, and she also uses botanicals grown in the herb garden on the deck outside the restaurant. An open kitchen allows full view of the chefs at work, and there is a chef’s table available for an up-close and personal dining experience. Staff are especially knowledgeable on the cooking techniques and ingredients, and adopt an entertaining storytelling tone when explaining the dishes. A sommelier is on hand and will pair wines to accompany meals or individual courses. The name “Allium” is taken from the genus of flowering plant that encompasses many species, including the onion, garlic, scallion, shallot, leak, and chives.

Ambiance and Décor

Cool white and royal red are the predominant colours of the dining room, which has an extensive glass wall to one side and a long bar with seating to the other side. Antique saloon chairs provide easy seating at the tables, with high stools at the bar, and the atmosphere is as conducive to business dinners and corporate entertaining as it is to more intimate occasions.

Menu

The cooking technique is essentially classic French inspired, with highest quality ingredients imported internationally and up to half of the land-based agricultural produce sourced from local suppliers of organic food. The menu is changed every two or three months to suit the seasonal availability of ingredients and to ensure a continuing interest for regular guests. The cocktail menu has a significant focus on bespoke cocktails, and botanicals from the hotel herb garden are used in the mix. The wine list features over 200 labels, with a strong focus on old-world wines from France and Italy as well as a large selection of natural, biodynamic and organic wines.

Chef

Roxanne Lange is a Dutch national who trained at culinary school in Rotterdam and gained practical experience working for noted Michelin-rated restaurants in Europe before coming to Thailand. She worked with Michelin star chef and fellow Dutch national Henk Savelberg in Holland, where she was sous chef, and later at Savelberg Bangkok, where she was the greatly admired chef de cuisine. Chef Roxanne uses experiences from her own background and world travels to prepare highly individual modern interpretations of French cuisine with an emphasis on sustainable produce.
